Fajita is a TexMex word meaning "a little strap" or quirt.

The food item "The Fajita" originated from the "strap muscle"

that covers the belly of a cow.

Why a Fajita Fiesta in Kyle?

Many believe that Kyle is the birthplace

of the present-day fajita taco!

Fajitas appear to have made the quantum leap from campfire and backyard grill obscurity to commercial sales in 1969. Sonny Falcon, an Austin meat market manager, operated the first commercial fajita taco concession stand at a rural Dies Y Seis celebration in tiny Kyle in September of 1969. ---http://www.austinchronicle.com/gyrobase/Issue/story?oid=oid:261130

In 1969, Sonny set up a concession both at a weeklong outdoor event in Kyle, Texas. He also went to rodeos, fairs, and outdoor festivals on nights and weekends selling his fajita taco to the crowds of appreciative people.
